About Sunspire Cafe
Sunspire Cafe was founded by Hiromi and Mary — a husband-and-wife duo, proud parents of three, and the heart behind this mobile espresso bar.
Hiro brings over a decade of experience in coffee and hospitality. He crafts drinks with care — from espresso to matcha, teas, and lemonades — pouring not just coffee, but connection into every cup. Mary has years of customer service and working in the bartending industry and works behind the scenes, managing logistics, bookings, social media, marketing, curating Sunspire Café’s specialty drinks and operations to ensure everything runs smoothly so Hiro can focus on creating memorable experiences through his latte art.
Together, they are intentional about inclusivity and wellness, and curating specialty drinks and always considering dietary needs and preferences by offering options like low-sugar and dairy-free. Their hospitality is rooted in thoughtfulness and genuine connection.
Like espresso and oat milk, Hiro and Mary balance each other — he is grounded and quietly ambitious; she is spirited, curious, and full of fire. He dreams big, she makes things happen, and together they create with heart, hustle, and intention.
More than a business, Sunspire Cafe is a dream realized. Though the vision began with Hiro, it has grown into a shared family journey. As a multicultural family — Hiro is Japanese/Filipino and Mary is Filipino — they take pride in honoring their roots, sourcing ingredients aligned with their culture and values, and building something truly their own.
Originally from Queens, NY, and now raising their three children in New Jersey, Mary and Hiro serve events across NJ and NYC, bringing joy, connection, and a spark of inspiration to every gathering.

I'm a former singer-songwriter with a longtime love for writing, film, photography, beauty, vlogging and content creation. I'm also self-taught in marketing — something that started naturally through years of creating and storytelling and became a huge part of how we've built Sunspire from the ground up.
Today, both sides of my brain run Sunspire.
I oversee much of our operations, logistics, bookings, partnerships and client experience while also leading our marketing, branding, content and creative direction. I'm constantly thinking about how something will work operationally and how someone will feel when they experience it.
As a Filipina, food and hospitality have always meant family, comfort and connection. I love bringing pieces of that into Sunspire through the flavors we create, our baked goods and eventually even more of the Filipino comfort foods I grew up around.
Somehow, every completely different chapter of my life prepared me for this.
Turns out, they all belonged in the same cafe.

Hi, I’m Hiro - the other half of Sunspire Cafe and the one usually behind the espresso machine.
I was born and raised in Japan and come from both Japanese and Filipino roots. Before coffee became my career, creativity was already a big part of my life. I studied art in high school, played in bands and spent years around music — which also happens to be how Mary and I met.
She was a singer-songwriter. I was playing in bands.

I've now spent more than a decade working professionally in New York City's coffee industry, developing my craft behind the bar and managing cafe operations. Over the years, I've built my experience around espresso fundamentals, extraction, dialing in, milk texture, workflow, equipment and latte art.
For me, being a barista is a craft.
That's why even as a mobile cafe, we want Sunspire to deliver the kind of quality and knowledge you'd expect from a specialty cafe. The creativity matters — but so do the fundamentals behind every cup.
My hospitality background also goes beyond coffee. I've worked in Japanese restaurants and ramen shops, including management, and have experience with the Japanese comfort foods I grew up with — ramen, Japanese curry, donburi, katsudon and more.
Coffee may be what you see me making today, but my vision for Sunspire has always been bigger than what's behind the espresso machine.
What we're building is a place where coffee, food, culture, art, music and hospitality can all live together.
